Limoncello Melting Moments
Serves approx 20
Ingredients
250g butter, softened
½ cup icing sugar
2 teaspoons limoncello
1 teaspoon lemon zest
1½ cups plain flour
½ cup cornflour
Method
Set oven to 1600C. Prepare 2 trays.
Prepare icing sugar in TMX if you need to.
Put icing sugar, butter, limoncello and zest into bowl. Beat on speed 3 until it is creamy.
Add cornflour and plain flour. Use :: to mix until all the flour is combined.
Sorry I forgot to check times when I did this.
If mixture is too soft refrigerate. (I didn't and mine spread too much)
Roll 1 level tablespoon of mixture and place balls 3cm apart on prepared trays. Flatten using a fork.
Bake for 15-20 minutes, then cool completely on a wire rack.
Filling
100g softened butter
3/4 cup icing sugar
1 tablespoon limoncello
1 tablespoon lemon zest
Place butter into bowl and beat on speed 3 until creamy.
Add remaining ingredients.
Spread over over half the biscuits and top with the others.
My mixture was too sof and as you can see from the photo they spread too much. They were still very tasty. I also forgot to change the cups measurements to weights - next time!)

McMich - Have made these yummy bikkies several times now and they are a hit with DH (these are now his new favourite) also with work mates.
Took some of these to the next door neighbours as a thank you. They told me they were the best they ever tasted and you couldn't buy any better anywhere. Well worth making.
Katiej - Oh my, these are lush! I was able to make these thanks to Judy's home made limoncello she gave me. I don't think these will last long here.
Lucyluu - Made these recently for some visitors, filled them with a cream cheese and limoncello icing. They couldn't get enough, I only had two left out of the twenty five I had made. There was only two visitors.

I just made half and didn't have any limoncello so added vanilla. I needed a tiny bit of water to bring the mix together - perhaps a tablespoon. Sandwiched with lemon curd and they were a real hit.
I had the dough in the fridge for about half an hour and didn't have any trouble with the biscuits spreading.

Nice Cookie, they look like the butter biscuits you get in tins at Christmastime although they are not filled.

Any liqueur would be ok. Or don't bother and just use vanilla essence for flavour.

fundj, we sure do need a chat. I am a country girl who has to very plain eaters (DH & DS) so it is mainly meat/fish/chicken and 3 veg in our house :'(

I have only just discovered that I like Limoncello. DD bought me a bottle a few years ago and I thought it was a distinct lemon flavour and it's not.

I have almond essencec in the cupboard (thanks to fundj). I might use that instead.

I've made Sambuca melting moments in the past, but this sound MUCH better (not actually a big fan of aniseed, only made them for DH who loves it). YUMMMMM better keep them out of reach of the kids though... ;)

It didn't take you long to turn the limoncello into biscuits Katie - I love to drink it but I will have to try these biscuits one day myself.
