This is a super little treat for Christmas hampers which is a combination of ideas from postings here (http://www.forumthermomix.com/index.php?topic=2480.15) and here (http://www.forumthermomix.com/index.php?topic=2480.0).
If you were to read both threads fully (please feel free to do so if you have the time) you may end up very confused about the best method so I have decided to rewrite the recipe to make it more simple for our newcomers who have not seen or made this recipe before. I have made a batch to ensure the instructions are correct. Enjoy, they are just wonderful as those who have made them will agree.
Ingredients
50 ml water
100g sugar
250g almonds
Topping, mix together
1 Tblspn castor sugar
1/4 tsp cinnamon
Method
Place the water and sugar into the TM bowl then add the almonds..
Cook for 13-14 mins/100o/reverse/speed 2/MC OFF.
Preheat oven to 160oC.
Make sure you are at the machine with a torch for the last 3 minutes as the water needs to have boiled dry and the almonds stirred until this happens. Watch the activity through the hole with a torch and between the 13 - 14 minute mark you will notice a complete change in the sound of the machine. This will coincide with the complete evaporation of the liquid. Stop the machine exactly at this point.
Tip the almonds out onto a lined baking tray and bake for 10 - 12 minutes, giving them a stir at the 5 minute mark to ensure they all dry out properly.
Remove from oven, sprinkle with the castor sugar/cinnamon mix and allow them to cool before placing in a jar for gift giving.

uni there is also brazens spiced nuts (http://www.forumthermomix.com/index.php?topic=2581.0) which are yum too I made them last year..
just realised that her recipe is quite similar to roostudio's one but she says on her blog she got it from taste... only slight variation!

this is my version
preheat oven to 160 or 140 fan forced
Use a least 3 spices
All spices are ½ teaspoons and ground
Curry
Cumin
Chili
Garlic
Paprika
Turmeric
Coriander (yuk)
1 to 2 tablespoons of olive oil, if using only 3 spices use only 1 tablespoons of olive oil
½ teaspoon of salt
½ teaspoon black pepper
100 g pecan
100g blanched almonds
100g cashews
50 g macadamia
I just combine all spices and oil, salt and pepper to taste , then add the nuts stir well to combine. Bake in a preheat oven for 15 min or until golden brown and aromatic

I made these today in my ThermoChef. I don't have a reverse function, so I inserted the butterfly instead. Next time i will use blanched almonds as it stripped the skins off. I have ended up with crispy, sugared almond skins. They taste great, but don't look too appetising :(
