Post by: JuliaBalbilla on December 19, 2011, 01:36:55 pm
Name of Recipe:  Salsa de Queso Azul (Blue Cheese Sauce) – not tested

The original recipe tells you to cook at 85 degrees, but we don't have that, do we? JB

Tablespoons are European ones, ie, 3 teaspoons

Serves:  Not stated

Ingredients:
150g single cream
100g fresh cheese
1 tbsp butter
1 tbsp cornflour
100g blue cheese
1 tsp brandy
Salt
Pepper
2 tbsps milk (optional)

Preparation
Put all of the ingredients, except the milk, in the  *:.
Cook 6 minutes / 90° / Speed 4.
If the sauce is very thick, add the 2 tbsps of milk and mix for a few seconds / Speed 4.
Once you have obtained the desired consistency, turn out into a bowl and serve.

Tips/Hints:  This exquisite sauce goes well with many dishes, but above all with T-bone, fillet and sirloin steaks.  Also it is a good dressing for some salads.  At the same time it can be eaten woth potatoes or pasta.

Some types of blue cheese which you can use in this sauce are Cabrales, Roquefort, Danish blue and Gorgonzola.

Origin:  This is a translation of a recipe in Salsas y Aliños con Thermomix (Susaeta Ediciones)

I shall probably be adding recipes over Christmas as well  ;D  DD is spending it with her father so it will be a very low key affair this year and will probably make a selection tapas (our favourite way of eating).  However we will be celebrating Christmas around the New Year as DD will be here then.  We have ordered some mutton for then (quite difficult to get in the UK) and instead of pork chipolatas, we are having bison sausages (also difficult to obtain).
