Title: Converting stove top temp to TMX temp?

Is there a standard conversion for stove top temperatures to TMX temp? I am making a nectarine sherbet and the original recipe says to cook on stove top on medium heat for 15 minutes. I have guessed at 80 degrees for 18 minutes. Does this sound right?

Seemed OK by the end of cooking. The milk and cream was also to be heated on medium heat until nearly simmering. This I did for 7 mins, 80 degrees, speed 3.5. I think it was too long as Thermie was already warm. Will be interested to see if any of the forum "professionals" have any suggestions - although I am strike one with Fundj...

Im pretty sure that even on medium your stove top would reach a temperature of 100 celsius test it yourself by boiling 1/2 L of water and see how long it takes to boil and compare it with the tmx.

I'm not a 'professional' Kerryn but I would use 100o for medium and Varoma temperature for high. Custards and delicate things which you would cook on low on the stove-top, I would use 90o, heating milk is 90o and melting chocolate is of course only 50o.

I know this is a really old thread, but I tripped over a website that might be helpful when trying to convert recipes....the temperatures on it are in degrees Fahrenheit but there are a lot of calculators around to convert F to C.
