Yesterday I made this bread (http://www.recipecommunity.com.au/recipes/atta-wholemeal-flour-bread/29320#comment-27854) from the recipe community. It has 500g atta flour in it and the recipe asked for 20g dry yeast. I decided this was far too much and put 2 teaspoons in. It had 3 risings and the bread crumb is holey. DD called it crumpet bread.
Should I have put the 20g yeast in?
Should I only do 2 risings?
Thanks. I liked the flavour of the bread, it's just a bit airey.

i am no expert, but i think the over night proving could be at fault

I agree with you. I didn't prove it overnight just until it had risen. I think 3 risings was just too much.
