Title: Fresh Corn, Pancetta & Chives + Tropical Sorbet Quick Fix in the Mix
Post by: judydawn on January 12, 2012, 11:15:38 pm
These reviews from CreamPuff63 were hidden in another thread so I would not be able to link them to the list unless they had a posting of their own.  Here's CP's comments.

The  Fresh Corn, Pancetta & Chives  p78 gets a big tick for tastiness and ease. Serves 4 apparently but it sounds like Alyce doesn't have a son with hollow legs so tonight it served just 3.

Tropical Sorbet p198 was smooth like icecream and a guilt free dessert cos there was no added sugar (100% frozen fresh fruit). There was only 3 people  eating tonight and there was stacks of this left over so I've put into ice cube trays for another night.

No worries CP - they are now both posted on the recipe book review list under separate headings and will be easily found.

We loved the Fresh Corn, Pancetta & Chives recipe.  It made 4 serves here but then we don't have huge serves of anything.  When I do it again, I'll cook it a few minutes less to keep the corn more intact but it is a great little recipe.  The pancetta really tops it off as pancetta has a habit of doing. Only change I made was to chop the onion 2 sec/speed 5 and not 5 seconds.

That does look nice JD  :)

Your book still hasn't arrived Hally?   :)
Do you know if it's coming via mail or courier?  If courier perhaps it could be chased up?
Hope it arrives soon and you can get cooking!!

This was yum.
I used 8 cobs (were smaller, = 520g)......Bought a chunk of pancetta, and doubled amount and diced it.
Cooked 15 mins., used 2 sping onions, left out chives ( didn't have any)...but don't think it made much difference.

We really enjoyed this and will make again.  We cooked it for less time as we like the texture of corn, used bacon instead of pancetta, left out the chives as we didn't have any and also halved the recipe.  There was plenty for the 3 of us.

Great,  made this twice in 2 days.  Some left over so made corn cakes,  and served them with light sour cream and sweet chilling sauce.

We really enjoyed this side dish. It made 6 servings for us. Only chopped the onions for 2 secs on speed 5, the rest as per recipe. I like Chookies suggestion of corn cakes - will do that next time with the left overs.

I made this dish again and only cooked it for the 15 mins as suggested. I liked it better when it was cooked for the 20 mins as per the recipe. With 20 mins the corn was a little drier and more buttery flavour. Family loved it. No left overs for corn fritters  :)

Judy I think this is nice eaten cold as a salad.  It is very tasty.  I have also mixed it with cooked and cooled Risoni pasta.  This makes a tasty and easy pasta salad.  Enjoy

Thanks for the heads up Bootobethin, great idea to turn it into a pasta salad too.

Edited to add - tried it as a salad and yes it works really well.

Made this last night as sides to BBQ steak, it was delish.  Fed four adults and one child with small amount left over.  Didn't tweak anything.  Will be one the menu again for sure.  My first recipe from QFITT.

I had planned to make this today when I saw the temperature would be 39C. The frozen fruit pieces seemed to combine all as one big 2L block and I wanted to make it before the girls went to sleep so that I didn't wake them up. It was a struggle to separate but with the help of a knife and lots of bashing, I got there in the end. I found it was too much to put the whole lot in at once (physically) so did it in two batches. I'm not sure that the last step of the process does anything really.

I would agree with the others and say this serves more than 4. Probably more like 6.I used passionfruit pulp from a jar instead of the real stuff. So the sorbet itself was nice but both hubby and I thought it lacked sweetness, something which we didn't mind the more we ate.

I made a half serve of the corn dish as I only had two cobs of corn, but substituted ham for the pancetta and it was delicious. DD wants mew to cook it again. :)

It's a favourite of mine too ES, haven't done it for a while.  It's nice cold as a salad too.

I had to review this recipe as i really love it.  I've also adapted it to use frozen corn if catering for a dinner party.  I used 750g of frozen corn, 600g chicken stock for 12 people and had plenty left over.
I reheated some in the varoma the next day and it still tasted good.
I was trying to impress some non-thermomix owners by cooking the corn below, and steaming some brocolli above in the varoma but they didn't seem to notice  :(   >:(

Made this tonight to go with the pork spare ribs. I should've read the reviews suggesting 15 mins cooking time as I think I would've preferred that too. It was nice however I think I would prefer this with just plain corn instead of cooking it.

I'm not sure how others peel and clean their corn, especially getting rid of the silk however I came across this method but didn't use it (thought I didn't have time but I probably did) so did it without the microwaving part but you need to do that part.

I am going to make this tonight, but when I was reading this thread to review the recipe, I came across this link courtesy of Tasty and gave it try.  OMG this is life-changing!  I LOVE fresh corn.  I HATE removing the corn silk!  I will use this method every single time I cooked corn.  5 mins is way too long for my microwave.  After 3 the corn was quite cooked, so I am going to experiment with shorter cooking times that will hopefully help me remove the silk and also have relatively uncooked corn.  Thank you Tasty for sharing this great tip.

Just cooked a sweetcorn to go with my lunch, tried this method and wow - it's amazing.  I have a little gadget that then removes the corn from the cob so I'm now eating a bowl of lovely sweetcorn.  I cooked a large one for 5 minutes, it was perfect in a 1200W microwave.  Must tell Mum about this one and anyone else that will listen.  Thanks for the bump Lellyj, I'd forgotten about it.

Is the corn fully cooked then?  It's a great idea as I hate getting all the bits off the cob.
