Hello again to everyone. I have just been wondering if anyone has any recipes for orange/mandarin butter? I`m thinking of using the lemon curd recipe and just substituting the orange/mandarin juice. Do you think that it would work out the same or would I have to do it different somehow? Or would you use half and half of the lemon and then add the other juice? I might try it out today and get back to you with the results if any. I seen on another site a recipe for mango butter that I also might try. I have also made passionfruit butter with nearly the same recipe as the lemon curd but not in the TM. Thanks to anyone that can help. Sandy

The recipe should be OK to substitute orange juice for the lemon juice - but to give extra umph (techo term) with the orange mix it would be best to get some extra orange flavour.
Two ways - use some grated orange rind; or, rub sugar cubes over the surface of the orange to impart some orange essence to the sugar cubes and blitz these to make the castor sugar.
If you want tang, then possibly two part orange to one of lemon would help too, depending on how tart/sweet the oranges are that you are using.

I have a recipe in my book for Orange curd.
250g sugar
Orange peel (no pith) of one orange
200g of real freshly squeezed orange juice
120g butter
4 eggs
Blitz sugar 30 seconds, speed 5 to 10.
Add peel, repeat the blitz.
Add juice, butter and eggs, program 20 mins, 90º, speed 4.
Keeps for one month in a jar in the fridge.
Am going to make it this weekend Orange Meringue Pie. Will try and post pictures before the kids get to it! ;D

Bron, this sounds yummy. We're nearly out of lemon butter so I think this will be next. The idea of an orange meringue pie sounds really good. I may copy your idea, hope you don't mind. :D

Yes it does sound yummy! Will let you know later, although not too sure which pastry to use for the pie? May use the sweet version. Will post the recipe when finished with photos anyway!
