This afternoon I made the Bacon & Corn Chowder with Cheesy Scones. One word.....Delicious!
I can't remember enjoying a soup quite so much for a long time.
Just a couple of little things that I did; As there is only the 2 of us I halved the cheesy scones recipe which still made 8 scones which I will continue to do again.
I left the MC off for all the cooking part of it too, and I added 50g cream instead of the optional 100g.
I used frozen chicken stock concentrate cubes for the stock with also a cube of the frozen veg stock concentrate for added flavour.
The scones were really nice also. I can't fault this dish at all! 5/5

Made this for lunch today for the family. Nice easy quick recipe to make. Didn't need to make many tweaks excepting that I added a little extra vege stock like JulieO and I thickened a little extra.
5/5 for us.

I made this for our supper this evening and we all thoroughly enjoyed it.Just made it as printed in the recipe and seasoned with freshly ground pepper but no salt :)

I'm making this right now as it's cooler tonight. I'd make my scones larger in diameter next time as2 small ones won't fit in my soup bowls for the oven. I'm only making this as a trial, so am baking the rest of the scones.

Next time, I'll freeze the raw scones instead of baking them as they need the extra liquid of the chowder to have a nice soft texture.
Never mind! I'll still freeze them and will just add them to the soup in the oven when it's nearly cooked through.
My oven mustn't have been hot enough because the scones were 'doughy'. They were browned on top, but didn't rise up like JulieO's did in the picture.
Loved the flavour of the soup.

1 chicken breast (double breast)
200g speck or bacon
4 garlic cloves
150g brown onions, halved
400g Diced vegetables - ( 2 potatoes + 1 carrot + 2 stcks celery)
1L chicken stock
1 tbsp Umami Paste
40g corn flour
200g milk + 100ml lite cream
1 can creamed corn + ½ cup frozen corn
Sea salt to taste
I served topped with shaved parmesan
• Caramelised speck/onion and garlic on stovetop. Add to TMX together with the ingredients in following step.
• Chopped chicken, diced vegs, stock and unami paste cook for 20 min/100°C/Reverse + speed 1.
• Mix cornflour with milk, add cream, corn and cook for a further 5 min/100°C/Reverse + speed 2.
• Added sea salt to taste
These quantities result in the TMX jug being full to capacity!!!

Johnro, that sounds lovely. My DD said the soup would be lovely with chicken in it. I would use creamed corn next time I make it and add potato as a part of the veggies.

Made this again last night using a combo of the tweaks form my last attempt but ommitting cream and frozen corn - the cheesey scones were delish!!
