Made this today to serve with desserts. I am not a lover of raspberry seeds so I strained them out at the end of the cooking. It wasn't sweet enough for me so I added 2 tblspns icing sugar at this stage too. I intend freezing it in small quantities for decoration purposes. I've made many batches of coulis but never with wine in it, very adult taste and very nice with my tweaks.

Judy, how did this freeze? Did the alcohol keep it soft or did it firm up?

Yes it did Marina. It spoons out quite easily. When I freeze non-alcoholic coulis, I pack it in a small ziplock bag in a thin layer then just chip off the amount I want for decoration but this one can be frozen in little tubs.

Going to make this later today, to use in Tenina's Black Forest Crepe cake. Replacing cherries with Raspberries, and the 300g of reserved cherry juice with the raspberry coulis.

Plan is:
Black Forest Crepe Cake -- coz it looks devine
Raspberry & Red Wine Coulis -- to replace the cherry juice
Baked Lemon Cheescake (from here) with Strawberries on top (possibly inside) --
Caramlised Nuts (from How to Cook Everything app) -- coz I want to try them
Carrot Cake (from here) -- coz its apparently yummy (and bob wants to give left overs to colleague who likes it)
Chocolate Brownies (Aus Thermomix recipe site) - Mainly for picky kids, though very yummy
I want to also make, but am not,
Lime Merriguin (can't spell it off the top of my head)
Caramel Apple Pudding
and a couple of other bits.
Half think I should make something else savoury for the non sweet tooth people (like me)

This Coulis was very nice, didn't need any additional sweetening. We both kept having the odd spoonful as it was so darn nice.
