Title: Preserving food in the fridge

I would love for someone to tell me about how to preserve feta from going off once you open a packet and leave the remaining bit in the fridge.  I am always throwing out half used feta since it has gone off after a couple of days.

I usually put it in some salty water in an airtight container in the fridge because that's often how it's sold in the shops.. It lasts much better than being wrapped in plastic

The last lot I bought hasn't even been opened and the package is all puffed up so I definitely won't be eating that one!  Use by date 24/10/12 ??? I haven't kept the receipt so don't know if Foodland would take it back.

JD thats not good.

My rule of thumb MAXIMUM 4 weeks in water.i have a tupperware conainer that is designed for this.

I've found the best way of extending shelf life of just about anything in the fridge is use a vacuum sealer (bag or container). I find cheese generally lasts at least twice as long as normal. And lemons/limes that would normally dry out in a week in the fruit bowl, last for a couple of months in vacuum bags (they go a bit soft but fine for zesting and/or juicing). Vacuum pack meat and freezer-burn is history. My vacuum packer comes second only to my Tmx as a "must have" in the kitchen.

PS You can even vacuum pack silver to stop it tarnishing!

Thanks for the vacum sealing tip, yesterday was given a shopping bag full of limes.

Also going to try  preserving some.

Must try the silverware tip, thanks Rogizoja - don't use it very often so it would be great if I didn't have to clean it everytime I wanted it.

One way of preserving feta cheese, is to keep it in brime in the fridge. To make the brime, use 2 cups of water, 2 tbs salt. Boil for 5 minutes remove from TM or hot plate and let it go cold. Place the feta in a container and cover it completely with the brime. Just rinse well in cold water to use it. It should last for more than a month.

As soon as I get off the forum I must go and vacuum seal my silver. It is never used as it tarnishes so quickly. We actually have the flares for our boat vacuum sealed. :P
