Title: Rock Cakes

I am only on my 'L's' in so far as my Thermomix is concerned. Love it, it's great, BUT I have now made ROCK Cakes twice and both times they havre turned out to be SOFT cakes. HELP !!!!!! what am I doing wrong. Thanks, Marg

Hi Margaret, welcome to the forum.  I haven't made the rock cakes myself but here (http://www.forumthermomix.com/index.php?topic=4666.0) are some reviews of that recipe if it is any help to you.

Welcome to the forum Margaret, I can't help you either with the rock cakes as I have not made them. Hopefully Judy's link will give you the answers.

Hi Marg
I make rockcakes a lot, probably every second weekend :) as they are a lunchbox favourite here. I use unbleached organic flour (which I think is a little thirstier than normal flour) and I follow the recipe except for the sugar (none on top and only 70g in the mix).
My suggestion would be to add a little less milk. The mix should be a bit rough looking when you put it on the baking tray although it does smooth a little as it cooks. Oh and they should be golden brown when cooked.

Hi Margaret, welcome. After seeing your entry, I thought, I hadn't made rock cakes for years, so today made three batches, used up all the bits and pieces of fruit and nuts in the pantry instead of currants and they were lovely.
