Here is the recipe for Creamy Vanilla Coconut or Banana Ice Cream.

Ingredients:

1 can full fat coconut milk
1/2 cup minus 2 tbs maple syrup or 1/4 cup agave
4 tbsp alcohol free vanilla
1/2 cup rice milk or other milk substitute
1 teaspoon guar gum (the original recipe doesn't call for this but they think it improves the consistency)
2 ripe bananas (optional)
1/3 cup finely chopped cashews or other additions (optional)
Cinnamon to sprinkle on top (optional)

Directions:

1. Combine all ingredients in a blender.
2. Blend thoroughly.
3. Add to icecream maker, following manufacturers directions for churning.
4. For soft serve icecream, eat immediately. For harder ice cream transfer to an airtight contact and freeze for several hours to a day.
5. Enjoy!

If someone is able to convert this recipe I would be forever grateful!! :-))

Thank you all for your responses!  :)

Recipe Requests / Can you help with Soy & Dairy Free Icecream Recipe?
« on: August 03, 2011, 01:51:47 pm »
I have just found a soy and dairy free icecream recipe which blends the ingredients and then says to add to ice cream maker and follow manufacturers directions for churning. Is there any chance I could make this in the TMX?? I have made my son yummy vanilla and chocolate icecream in the TMX and my poor daughter keeps missing out.  Any help would be appreciated!! Thanks. :)

Thanks so much for this easy recipe. Tonight was my third batch, I made them with 320g white flour, 200g wholemeal and I included 1Tbsp of Vinegar into the 300mls as a bread improver and they turned out great. Even DH said maybe the TMX isn't so bad!! Thanks again.  :)

Hello. I have had my Thermomix a few weeks now due to my persistent nagging my husband finally gave in.  ;)

I am a mother or two with my own bookkeeping business.

One of the main reason I bought the Thermomix was to help with my 3yo daughters diet. She is currently on a wheat, dairy, nut and soy free diet.

So far I have had fun making sushi, custard, soups, pasta, dips and my best dish would have to be the beef rendang. I am definitely going to buy the Indian Cookbook everyone raves about.

I would really appreciate some healthy recipes to suits my daughters diet and the whole family if someone could help me out? And if I am not asking too much a recipe that would win my husband over!

Also, with the beef rendang which I thought was the best curry I have ever made. I was wondering if the coconut milk could be changed for Light & Creamy instead as my husband is not a fan of coconut milk.

Thanks and I look forward to chatting with you all soon. :)
