I've read that heaps of people make fudge, balls (eg rum balls, apricot balls etc) to give to people over the Christmas period but I'm struggling to find out how long this ind of food will keep for. I'm sure it depends on the recipe, but are there any general rules of thumb that people follow?

I don't have that cookbook but will be looking into it I think. The stewed prunes are for my 6mth old, so I think I'll leave out the orange juice but increase the amount of water by the equivalent and see how I go. Thank you once again 4

I've looked in the baby and toddler book and the edc but from what I can see most of the stewed fruit ones have you putting the fruit in the tm basket, but prunes are so sticky I thought they would have needed to be in the bowl with water, but as I'm fairly new to my thermomix I'm really not sure what temp or speed I would need to cook them at or for how long. Thank you all for your responses. I left it in the fridge overnight, but it still hasn't thickened
I used one of the recipes of this site - Tenina's, but I suspect it might have been the size of my lemons. I'll be making more closer to the end of the week, so I'll try the cornflour technique. I'll give the choc hazelnut spread a go today. 6

Hi
I'm a very new thermomix owner and I've been trying to cook a whole heap of yummy food that I wouldn't normally attempt on the stove top. Today I attempted to make some lemon butter (as I want to give some as gifts on Mother's day), but they haven't really thickened or set very much. I used lemons off my own tree and they were quite small - could this have been the problem, if I added the juice of three lemons instead of two would that make it thick or do I need to cook it for longer? Thank you for your help.
