Questions? Technical Issues? The Survival Guide / Chocolate Steamed Puddigs

After receiving my Thermie around a week ago I have been cooking up a storm! I have just made the steamed Chocolate Puddings from the budget book however using the cornflour made them really grainy......any suggestions? Coconut flour?Rice flour? They didnt rise like the recipe either.
