Chewy Granola Choc Chip Bars
12 serves
70g walnuts (optional)
60g butter
60g brown sugar
50g honey
50g golden syrup
1 tsp vanilla extract
1/4 - 1/2 tsp salt
170g rolled oats
40g desiccated coconut
40g white or whole wheat flour
80g chocolate chips of your choice
1. (optional) Chop 70g walnuts 4 seconds, speed 5
2. Add 60g butter, 60g brown sugar, 50g honey, 50g golden syrup, 1 tsp vanilla, 1/4 tsp salt. Melt 60 degrees, 1 minute, speed 2.
3. Add 170g rolled oats, 40g coconut, 40g flour. Mix 30 seconds, speed 3
4. Add 80g chocolate chips. 20 seconds.
Press firmly into buttered & lined square pan (thicker, 12 bars) or slice tin (thinner, 16 bars). Bake 20 - 30 minutes in 180 degree oven until evenly lightly browned. Cool, turn out onto cutting board, and slice into bars. Individually wrap and stored in fridge or freezer.
Mixture can be easily pressed into tin with the back of a buttered spoon.
