There is a review for the Red Onion Relish here.

Thank you, I hadn't seen that.  Have now, I'm obviously not alone in thinking it needs chopping.  :-)

Thank you for this.  I was just about to make the relish and was a bit puzzled by the 'method'.  I still find it disappointing that Tmx doesn't seem to have their recipes checked in a test kitchen.

Does the apple need to be peeled or not?  The recipe only says cored and quartered.

Has anyone made the Red Onion Relish on page 47?

I'm looking at the method, and it's just put it all in and cook - but that means the onions are still in quarters, the apple isn't peeled and is quartered, the dried apricots are whole...  I realise all the ingredients do soften mush down a bit as they cook, but I would have expected some chopping/pulsing either at the start or end.

Condiments and Sauces / Invert sugar - how hot does varoma get?
« on: April 27, 2014, 12:24:58 pm »
I want to make Invert Sugar http://www.chefeddy.com/2009/11/invert-sugar/ in order to make the Coffee Extract from the same site.  I've made them both before on the stovetop, before I had a tmx.

The Invert sugar needs to be boiled to 114 deg C.  I vaguely recall someone telling me that varoma temp was 115 degrees - can anyone confirm that?

If that is correct, then I plan to try making the invert sugar in the tmx - anything I should keep in mind while doing this, apart from the normal safety considerations when cooking with boiling sugars?

Tips and Tricks / Re: help needed!!!! meatloaf recipe
« on: January 29, 2014, 08:36:10 am »
Yes, the recipe looks confusing.  But it was one of the first things I tried as I'd heard it was good and wanted to use the Varoma.  I didn't bother "stuffing" or "wrapping" my meatloaf.  So I just made the mince mixture and shaped it into a meatloaf and popped it in the dish.  Easy peasy!  And it was delicious.
So the wrapping with foil is just for the shape, and then you remove the foil completely to cook it?  Because the recipe only says to remove the foil from the bottom of the meatloaf....

I'm hoping to cook it for dinner tonight, I'm just  ??? ??? ??? over the wrapping.

I assume the onion/capsicum/gherkins are served on top of the meat?  (or under it)

My ghee according to the Indian Cookbook didn't work either so I went googling and ended up back here.   ;D  It's now in cooking for 45 minutes and then I'll check on it.

Cookbook Contents / Re: Recipe Index from the new EDC May 2013

May 2013 is the one I have Melinda so look for that on the inside cover.  What is your friend's date inside her book?
I'll have to get her to check, I'm not at her house any more.

So May 2013 is the corrected reprint, is that correct?

I'm planning to buy the new EDC from the tmx website as (a) I've moved to another state and (b) my consultant no longer sells tmx.  How can I know if I'm buying the original with the errors or the corrected reprint?  Does it state it on or inside the cover somewhere?

I have the original EDC and was visiting a friend last night who has the new one - I sat there for hours reading through the recipes!

Thanks!   ;D

Chit Chat / Re: What are you been cooking today
« on: November 08, 2013, 01:04:35 am »
Today - I'm travelling to a Conference in Sydney, so all I've made is a big container of Coleslaw, minus the dressing.  Yesterday I made the Cooked Salad Dressing from Commonsense Cookery Book (circa 1980), converted to tmx.  Taking both those up to the conference with me as I know catering tends to be low on fresh veg and high in white carbs, pasta etc.

Boring cooking day today....   :)

Thanks Obbie,

Love your list of kitchen appliances in your signature.  I've got the Tmx, Kitchen Aid and pizza stone, plus a million other gadgets and tools - wouldn't want to be without any of them!

:D :D  It looks like these bags should come with a full set of instructions girls.
They definitely should.  Just a simple diagram would be enough.

Thanks everyone, for clearing up the confusion!   :D  Much appreciated!

Here's a picture of mine with a piece of plastic with foam underneath...the plastic piece sits in the bottom of the bag and TMX sits on top. The cut outs are where the feet go and this takes the pressure off them...hope it makes sense.
-I could be completely wrong...I too didn't get instructions and this is the only way I could work it out.
Oh!!! I thought that was for the back section, and the hole was for the mc to sit in!  I have that piece....   :-[ :-[ :-[
