Introduce Yourself / Hi! Mother of two from Melbourne.

Hello everyone
I have had my Thermomix for a couple of weeks, and I'm flailing a little!
I'm a very confident cook, but really struggling to convert my existing recipes (e.g. a lemon sauce with cornflour, which I would normally bring to the boil then reduce to a simmer for 5 minutes, what the heck temperatures and times do I use ?!). I keep coming across this forum when I search, so thought I'd join up.
I have two small children (Zach is nearly 1, and Tabitha is 3.5), and a husband who works ALL the time, so I am hoping the TMX will become my helpful sous chef.
I cook lots of Asian style food, French dishes, American Southern classics, and 'traditional' food like stews, steamed puddings, roasts etc.
