Afternoon Thermomixer. Leaving the soup in the fridge, obviously makes it chilled. It's a summer recipe, to help us cool down. It remains the same in thickness, before or after being placed in the fridge. Also it does not change the taste.
Never freeze melon. It kills the taste, completely. As we all know, melon has a mild taste, so better to use only fresh ones. I would change some of the sparkling water to ice so that it is cooled, when served. The bubbles from the water will stay after coming out from the fridge.
