Questions? Technical Issues? The Survival Guide / Re: mayonnaise
« on: October 13, 2011, 03:00:53 am »
Just attempted my first batch of mayonnaise courtesy of the EDC recipe but using extra virgin macadamia oil (recommended in the Healthy Eating book by Cyndi O'Meara) ....... Failed! It split  :'( So I checked out the forum and was encouraged to see others have had the same problem.

Thank you for the suggestion to use the failed batch and begin again. I used two egg yolks and vinegar this time (used lemon the first time as I prefer the taste and it's lower in salicylates) and heated the bowl to 37c. It didn't split but is not thick either. It is the consistency of salad cream which is OK as I can still use it.

I'll try again when I've eaten up this lot and hope for a better result next time!!   :P

Thanks for the tip re buckwheat flour, I was intending to try that. I've made the bread several times now using amaranth flour and that works too.  ;D

I've made many different GF breads before I bought the TM and they have all been of a 'batter-like' consistency. This recipe is by far the best I've tried and the tastiest. It doesn't taste like cake mixture as some of them do. I love chia seeds and so add them to the mix for that extra boost of fibre and Omega 3. Yum!!   ;)

Now I'm trying the mayonnaise.......  :-\

:o Hello! I have recently purchased the amazing Thermomix and am enjoying getting to know how to use it.

I need to eat gluten and lactose free so it can be quite challenging at times. I love using organic produce whenever possible and making food from scratch. There is only my husband and me at home now, but I have two growing grandchildren who visit regularly. My 4 year old granddaughter loves cooking and we have already begun getting used to the new time-saving methods with the Thermomix by making the chocolate cake (GF SR Flour substitued) and it was yummy!!

I've made a number of recipes and the gluten free bread and they have all been delicious! I'm really looking forward to making the most of this incredible machine!!  ;D

Thank you judydawn for this suggestion. I will give it a try and let you know of the results.

I have tried the 'introduce myself' page by clicking the spot, but couldn't see how to do so. I must be missing something very basic. I've even clicked the 'help' section but I can't find out how to introduce myself. ??? Might have to try again later when I can concentrate better (my 4yr old granddaughter is with me today).  :-\

Thanks again for your help.  :)

I'm new to this site, having just purchased my Thermomix. Can't wait to make this bread! Can anyone suggest an alternative for besan flour as I have a bad reaction to chickpeas please?
