Banana's price start going down, yay...  Grab some banana from Harris Farm and made my favourite Banana Bread from WW October 2007 with some tweak.  This banana bread freeze beautifully.  I love toasting this in sandwich toaster.

Made: 2 loaves

Ingredients:
185g butter, dice
330g  brown sugar
225g SR flour
110g plain flour
1 1/2 tsp mixed spice
1 tsp bicarbonate of soda
3 eggs
250g light sour cream
4 banana, chop roughly
1 TBSP damerara sugar, to sprinkle on top

Method:
1. Preheat oven to 1600C, grease and line two loaf pans.
2. Put  butter on the  *: , 3 minutes, 600C, speed 3.
3. Put the rest of ingredients, apart from damerara sugar, mixed at speed 4 for 30 seconds.
4. Pour into loaf pans, sprinkle with sugar.
5, Bake for 50 minutes or until cooked.
