Hi Everyone, Well it is mango season here again and I am looking for a recipe for a sugar syrup that is tried and tested that I could use in the vacola system. Last year I tried it with a couple of different types [light  & medium] and all I ended up with was a heap of bottles sitting in the cupboard boiling. I don`t know what I did wrong but the longer they sat the more they boiled till I had to ditch them all.

The Fowler's Vacola book that came with my kit has a recipe. This kit is from before we switched to a sane way of measuring temperature, by which I mean it's in degrees Fahrenheit.

Select Mangoes which are nice and ripe. As this Fruit is very subject to fermentation when bottled in Syrup, it should be sterilised twice.

Place Rings on Bottles. Remove stones from Mangoes, slice Mangoes and pack in Bottles. Fill Bottles with Heavy Syrup. Place Covers and Clips on Bottles.

Bring to 180 degrees and hold at this temperature for 2 1/2 hours.

After 48 hours, re-sterilise by bringing to 180 degrees and holding at this temperature
 for 1 hour, and boil for ten minutes before serving.
