thanks for the recipe -- i baked this tonight and made some changes -- added 1 Tbs oil and put dough in bowl (in hot water bath in sink) to rise for about an hour; then knocked it down and shaped into tin, and again in hot bath for about 35mins - should have left it a little longer i think --- result was a lovely loaf of bread -- it does have a sourdough-type flavour, which is great. i wish it had have risen a little more, but i did only use standard white wheat flour -- i'll try again with bakers flour and spelt and see how i go.
