Recipe Requests / Re: Healthy Children's Meals please?
« on: June 13, 2012, 04:03:06 pm »
I wanted healthy i.e. no red-meat and not dairy based because I want it healthy.  We don't do sausages or mince or any processed foods. This shouldn't be 'extremely hard to find' as I think this is basic healthy eating.

There seems to be a belief that 'children's food' is about burgers, sausages, pizza and fish fingers and I've always avoided this 'pitfall' and my daughter is now nearly 8.  I'm sure there must be easy and quick recipes that would appeal to children.

At the moment I am cooking some potatoes in my TMX with some plain white fish steaming on the top and in a minute I will add some veggies to go with it.  I'll mash the potatoes when they are cooked.  This is one dish my daughter loves.  But I'd love a section on this website where I could get lots more HEALTHY children's meals (which of course would appeal to grown ups too!).

Any suggestions gratefully received.

Recipe Requests / Re: Coconut Flour
« on: June 13, 2012, 03:54:08 pm »
You cannot make your own coconut flour from coconut.  Coconut flour you buy from the shops is de-fatted.  If you ground coconut finely you would end up with finely ground coconut which is not the same as coconut flour as you haven't removed the fat.

As regards the cost it doesn't work out as expensive as it looks as coconut flour bulks up an awful lot in cooking/baking (this is why you need specialist coconut flour recipes.  Hope this helps.

Recipe Requests / Healthy Children's Meals please?

I've been searching this forum and Googling to find some healthy easy children's meals!  No success so far.  I thought there must be a cookbook or a forum somwhere?  Babies and Childrens section seems to be primarily sweet stuff and baby stuff.  I'm looking for meals that are full of veggies, no red meat, lots of vegetarian options, lots of dairy-free options, lots of raw salad type recipes.  Where can I find them!!!????  Thank you to anyone who can give me some ideas  :)

Recipe Requests / Re: French Onion Soup - Recipe please!
« on: September 23, 2010, 11:47:09 am »
Thanks. I could try Brons recipe but it didn't look like an 'authentic' french onion soup recipe because it didn't use beef stock but perhaps it would work with Delia Smith's ingredients?

The important thing with the recipe is needing to brown the edges of the onions in the first stage and then to caramelise them in the second stage but I don't know what settings to use for these two stages without burning them but still getting the caramelisation.

Recipe Requests / French Onion Soup - Recipe please!

Does anyone have a great recipe for French Onion Soup that gives as good a result as Delia Smith's conventional recipe. It's the best I've every tried.  Her ingredients are :
700g onions
2 tbs olive oil
50g butter
2 cloves garlic
1/2 tsp sugar
1.2L best beef stock
275m dry white wine
2 tbs cognac
salt & pepper
(served with french bread and grated Greyere cheese)
The original recipe takes lots of time on the hob.  I'd love to know how to  make this in Nermal (our pet name for Thermomix).  In original recipe you have to fry onions in butter, oil and sugar on high heat until they edges have turned dark then reduce heat and cook for at least 30 mins until base of pan "covered in rich, nut-brown- caramelised film".  then add stock and wine and cook for another hour!
I'd appreciate any help in converting this great recipe.

Drinks / Cordial Recipes??
« on: September 06, 2010, 11:54:57 am »
Hi!

Does anyone have an elderberry cordial recipe? Apparently elderberry  cordial is very good for treating and preventing winter colds and flu.

Or perhaps you have another berry cordial recipe I could us?

Many thanks.

Cakes / Butter icing recipe in grams please!

Hi!

Can anyone out there give me a recipe for making butter icing with all the weights in grams (rather than in cups) please?  We don't use cup measurements here in the UK.

 :)

Introduce Yourself / Hello from Tyrella
« on: August 05, 2010, 09:29:14 pm »
I've owned my TM for a few months, inspired by Janey Lee Grace and a presentation done at Taymount Lifestyle Clinic in Herts.  I was intending to use it for lots of lovely raw food recipes but have been tempted down the path of chocolate and almond spread, lovely jams, icecreams, cup cakes and soups  ;D

I haven't even had my demonstration for someone to come and show me how to use it in my own kitchen as we've been going through a big house refurbishment and am only just now coming to the point where the kitchen is looking to be finished!  But I'm looking forward to finding some lovely healthy and raw food recipes to get me back on track.

Jams and Chutneys / Re: Raspberry Jam
« on: August 05, 2010, 09:00:00 pm »
I had success with the raspberry jam!  12 mins on speed/speed1/100 degrees using the Strawberry Jam recipe in Fast&Easy cookbook but using jam sugar and no lemon juice gave a perfect result. :)

I tried the same recipe using granulated sugar and lemon juice and ended up with raspberry sauce - very delicious and I'll use it, but not what I was aiming for!

N.B. I tried cooking the jam for longer using the regular sugar but this noticably affected the taste of the jam and gave it a darker colour, though I did achieve a good set.  Using jam sugar preserved the fresh taste and gem-like colour of the fresh raspberries.

Has anyone got a recipe for making bramble jelly (the clear seedless type of jam)? I have a juicer and am wondering if it would be a quick way of making jelly by using juice then zapping it in the Thermomix without the hassle of using a jelly bag or muslin.
