Cakes / Turkish Delight Cupcakes with Rosewater Buttercream Icing

My first recipe from scratch, after having a look at turkish delight and loving the flavour of rosewater.

Ingredients

For Cupcakes
110g softened butter – 75g raw sugar – 20g pistachio nuts unsalted – 120g self raising flour – 2 free range eggs – 30g rosewater

For Buttercream Icing
150g softened butter – 300g raw sugar ground into icing sugar – 1.5 tablespoons of milk – 1 tablespoon rosewater

 

Method – Cupcakes

1. Preheat oven to 180 degrees.

2. Grind raw sugar for 5 seconds on speed 10. Remove and set aside.

3. Mill the pistachio nuts until fine 10 seconds on speed 7.

4. Add sugar back in with all remaining ingredients and blend together for 2 minutes on speed 4.

5. Divide into cupcake cases and bake for 15 minutes. Once cooked, allow to cool for 10 minutes and transfer to wire rack.

Name of Recipe: Lactation Cookies
Number of People: Will making about 80 cookies, so recipe quantities can be halved, or freeze half, or make a full batch and share with your mothers group!
Ingredients:

Ingredients

60g butter - 120g brown sugar - 150g milled raw sugar - 2 free range eggs - 1 teaspoon vanilla - 1 teaspoon salt - 1 tablespoon baking powder - 50/60g wholemeal flour - 180g plain flour - 10g ground lindseed meal or flaxseed meal - 30g linseed - 80g brewers yeast - 100g milk or other liquid - 220g oats - 130g chocolate chips


Preparation:

1. Preheat oven to 180 degrees.

2. Combine the flours, linseed or flaxseed meal, linseed, salt, baking powder and yeast together for 30 seconds on speed 3. Remove from the bowl and set aside.

3. Mill raw sugar 5 seconds on speed 9.

4. Add the brown sugar and butter and cream together for 1 minute on speed 6.

5. Adding eggs one at a time as well as vanilla, combine for a further 30 seconds on speed 4.

7. Slowly add the dry flour mixture a spoonful at a time on speed 3 until well combined. [Should take 1.5 - 2 minutes].

8. Add 100g of milk [or other liquid], oats and chocolate chips, and combine on speed 5 for 2 minutes.

9. Spoon tablespoon sized drops onto a lined baking tray and bake for approx 12 minutes or until the tops are nice and golden. Cool on a cooling rack.

Name of Recipe: Ham, Corn & Polenta Muffins
Number of People: 12 muffins
Ingredients:

110g polenta - 15g sugar - 215g plain flour - 1 tablespoon baking powder - 40g olive oil - 1 egg - 300g milk - 125g can of creamed corn - 3 spring onions - 150g shaved ham, sliced - 50g low-fat grated cheese [or grate in the Thermomix prior]


Preparation:

1. Preheat oven to 200 degrees.

2. Place the spring onions in the Thermomix and chop for 3 seconds on speed 7. Remove and set aside.

3. Put the polenta, sugar, flour, baking powder, oil, egg and milk in the Thermomix and combine for 20 seconds on speed 6.

4. Add the creamed corn, spring onion, ham and cheese and combine on speed 4 for 30 seconds.

5. Spoon the mixture into muffin tray and bake for 20 minutes in preheated oven 200 degrees.

[Hint: I sprinkled the top of each muffin with Parmesan cheese prior to baking]
