I have made quite a few times, and apart from the fact it makes loads and I always forget.... I pretty much follow the recipe. I find the flavour does not have enough depth to it so I usually add my trusty stock concentrate to season it and it seems to balance the flavour a bit better.  With regard to cooking on the stove top I can't see any reason why not, you would just have to be mindful of your liquid levels and ensure it does not boil dry and on a very low simmer.  Sorry can't be more help, as I say its been a while!

Drinks / Elderflower, Lime & Mint 'Mojito' Sorbet

I love Mojito's on a lazy hot summer afternoon and I have also been wanting to experiment with different flavoured ice cubes so this is what I came up with...........it can be eaten as a very tangy sorbet or dosed with Rum.

Ingredients

250ml  Elderflower cordial diluted and made into 4 trays icecubes
Zest peel of 2 limes
250 – 300g Lime flesh, zest and pith removed (can use some lemon)
100g Raw Sugar (can add more if like it sweeter)
1 bunch mint, leaves only washed
Garnish with a few extra sprigs mint
White Rum to taste approx 25ml per person about 120 ml (optional)
 
Method ( As per EDC sorbet)

Make Ice cubes in advance, strong dilution you can always bulk out with plain ice.
žPlace lime peel in bowl with sugar and good handful of mint, mill for 10 – 20 secs speed 9 (stop and scrap down if necessary)
žAdd lime flesh and half the ice cubes turn steadily to speed 10, add remaining Ice and another handful of mint using spatula to  assist.  If the consistencey need to be drier add more ice.
žAdd Bacardi or Alcohol of choice and blend through serve imeadiately
 
Note:  Bottle Green brand of Elderflower cordial is available at Woolworths

Thanks for all the great comments, it is so good to hear people enjoying my recipe and having the confidence to tweak them for their own dietary requiremnets and taste.
I have just posted a Turkey wrapped in bacon version for christmas which is basically the same, Its one of those recipes you can really play around with and get great results.  :)
