Desserts / Re: The Crone's Granma's Pumpkin Pie
« on: December 05, 2011, 12:10:35 am »
So, I ended up making pumpkin Whoopie Pies in the last mintue, but they were great.  I am still going to make a pumpkin pie for Christmas eve dinner.  Here is what I did for the pumpkin - pretty easy...

I used approx 1 kg Butternut pumpkin.  Cut off the skin and cut it into 3 inch pieces, and roasted them on baking paper for about 45 minutes at about 180 C or until it was browned slightly.  Then, I took it out. let it cool a little and put it in the TM at 8 for about 15 seconds or until it was all smooth.  I can of pumpkin (as was called for in my recipe) is about 1 and 3/4 cups of pureed pumpkin.

Butternut pumpkin is really sweet ( and I think even sweeter after roasting).  I am not sure if that is the best option or not, but it certainly worked.

It was a couple of years back, but I think I steamed pumpkin in the TM and then pureed and it worked well too, but I think it had a greater water content after steaming and so was not as thick, but the flavour was still good.

It the pumpkin cooked previously baked or anything?  I am an American living in Aus and am trying to make pumpkin pie for Thanksgiving.  Without canned pumpkin I want to make my own - which I think will be easy with TM, but not sure what to do.  Can anyone help?  I know out of a can it is very pureed, but not sure if it has been baked before or anything.  Can I just steam it in the TM for a while and then puree?

Made this recipe tonight!!  was delicious.  All the kids liked them too!
I used grapeseed oil to fry and did not know where to put the sesame seeds so just left them out - they were still delicious.
Thanks for the recipe.
A keeper!

Cakes / Re: Lunchbox friendly Muesli bar *NUT and EGG FREE*

Made this recipe today - was a winner with the family.  Did not find it too crumbly - I used some baking paper over my palm to compress the slice as firmly as I could before baking and it appeared to work.  Used some unsalted almonds in place of some sunflower seeds as I did not have enough.

I was thinking that it was kind of a nutritious recipe, but it is probably closer to cookies than anything else; it resembles anzac biscuits!  Yummy!

Thanks for the recipe - will def make again!

Thanks so much for posting that!  I just got an email from the person who sold me my thermomix telling me about this book and I really wanted to see what was in it before I paid $60 for it.  Now I know exactly! Thanks so much.

Just put these together...am waiting anxiously for them to harden.  I was eating the  mixture, and it tastes delicious!   It is quite sweet - I was not sure if it would be.  I also tried rapadura sugar instead of regular sugar to see if it would still taste good.  It seems like they will be great!  I think I will even try to reduce the amount of sugar next time... I am always trying to reduce the amount of sugar that goes into my toddlers mouth, but he will LOVE them!  I definitely would not feel guilty giving him one of these - full of good and tasty things!  Thanks so much TC!

So far I tried once and it was only slightly thicker than the milk that it started from...a little bit of a downer.  I tried again and it seems to have done the same thing - it has not quite been 8 hours yet.  I am not sure what I am doing wrong.  I am pretty sure that the Jalna biodynamic yoghurt that I have used is the right kind.  Not sure if the temp is the factor.  I have been using a thermometer, but maybe it is faulty or something.  I did add slightly more milk powder, but did not make much difference.  Maybe putting it in the fridge afterwards will make the difference.  Fingers crossed.  Could it be that it is too cold in my house???  I have it in the thermoserver with the lid on, but the house is only about 16...????
not giving up yet!!

Thanks everyone...just going to give my thermoserve a try tomorrow for some yoghurt - here's hoping for a bit of luck!

Who says in-laws are good for nothing?! LOL.  My mother and father-in-law bought it for me - for pretty much no reason other than they thought that I would like one and use one.  They were right.  Getting more and more confident with it every day thanks to you all!!  Hope to actually be on the giving end of the advice someday when I know what I am doing.

Hello...

Learning a lot about making yogurt from you all - thanks!  I have not made it yet, but trying to minimize my mistakes. Just a little confused about what I am supposed to put the yogurt into when it is cooked.  They talk about a "yoghurtmaker" or a "thermos flask", but I am not familiar with either of these terms.  Would anyone be able to enlighten me?  What do you all use?  I read somewhere that people just put it into the thermoserver, but don't know if it will work.  Also, what is the best way to sterilize things?  Just boiling water?
Thanks all!

Bread / Re: Bagels - sooooo easy & delicious!
« on: June 13, 2010, 04:11:09 am »
I am an American living in Australia, and am always craving bagels...was LOVING this recipe.
I have been struggling to convert recipes using wholemeal flour.  For this, I did 1/2 whole meal and 1/2 plain white flour and they turned out great - not too heavy as wholemeal sometimes is.  The whole family loved them!!  I about doubled the initial rising time to about 2 hours (the wholemeal flour takes longer to rise).  Then did everything else the same.  I put a few teaspoons of cinnamon in the mixture as well and that was a great extra flavour as smell as well.  Also I put an egg wash over them about 3 minutes after boiling them and for half sprinkled a little cinnamon sugar mixture - they really were excellent.  Will be making them again for sure.  However, next time I am going to let them rise over night so I can have them for brekky instead of lunch!

Got a present of a TM yesterday!! How exciting!  The book it came with is great, but there is not enough there.  Happy to see a forum where we can learn and share together!
Happy Cooking.
