thanks for your replies.  having calmed down a bit i went and looked at my normal zuch slice recipe and compared to Cyndis one.   my usual one does not have any oil and 80 grams of oil seemed alot at the time but i went with it.  i totally agree re the processing times for the vegies - it made them too mushy and water must have leaked in the cooking process.  also - my recipe calls for self raising flour not plain flour and corn flour ( why corn flour)?     all in all i must have over processed it and with the large amount of oil it was too wet and sloppy.   Finally - the recipe calls for it to be mixed - but not on reverse plus.  so it got even further processed.  here in lies all the errors.   sadly i no longer trust the recipes in my books!  but i guess i am being forced to be more instinctive with my cooking.   i did think i should have mixed in on reverse plus!

I have done too easy chocolate cake, best coconut cake and date and walnut cake and had issues with not being cooked enough in middle and or not rising well.  I think i will use the tmx for the chopping etc but keep the mixing for my trusty old bowl and wooden spoon!

i have had wonderful success with all the salads, dips, cada etc..  just not with cakey, slicey wet things!

I do think for the money you pay for yout tmx - the recipe books should be spot on and not in need of tweaking except in terms of taste or variations of.   I will re attempt it the once and follow my nose more and see how it gos.  not looking fwd to it though!

Suggestions and Complaints / cyndi o meara zucchini slice disaster
« on: March 09, 2011, 08:39:36 am »
Hi,

i keep having disasters and i have had my thermie for over 6 months now.  My latest  disaster was the zucchini slice in the thermomix cyndi o meara healthy eating book i recently purchased at a cooking class.    The funny thing is - zucchini slice is something i regularly do (not in the tmx ) and it is never failed before.  i thought i would try this version as it looked a bit healthier with a few more veggies in it.  I followed the recipe to the tee  carefully as i have had plenty of things not work.  i thought it odd to have oil in what was already a very wet looking recipe but went with the book.   It never cooked properly - despite longer cooking time.  was wet and sloppy in middle and i have had to throw away as my family were horrified.  i am getting a little weary of wasting both time and expensive ingredients on recipes that should be easy and simple ( have had problems with cakes, the veg nut roast, pasta dishes and now this).   has anyone tried this recipe with success?  what am i doing wrong to keep having disasters?  i find the thermomix works best for me with chopped meals and not mixed things like cakes and slices!  salads, cada, dips and soups are all great.  but cakes and loafs and the like i am not doing well with.

anyway - sorry to whinge - pregnant and hormonal and grumpy at having to throw out food and feeling like i am a crappy cook!

thank you judydawn,

i will try that email.  i guess i will have to get more confident at playing around with the recipes myself!  it is a shame the vego book is  not used much.  some of the recipes are really very good and super healthy.  my family and friends all rave about the pumpkin quiche in it.  i am just making a double batch of it right now as i type!

Question  for the moderators,

just wondering if there is a link or a person to whom i can ask questions regarding the  vegetarian recipes  from the vegetarian TMX book - or more specifically who put together the vego book?  i am having trouble finding info or help on the recipes from this book.  I have tried quite a few things in there and they are all great but need some tweaking and i am still lacking in confidence (terrible cook prior to getting my tmx)!!!   Thanks,

Astrid

Recipe Book Recipe Reviews / Re: Review - Best Coconut Butter Cake - EDC

Hi denzelmum,

i made this last saturday and the same thing happened to me.  it came out with a crust ( which i actually like so no worries there ) and not cooked enough inside.  i also had to put back in oven for another 15 mins.  no doubt that it still tasted yum and i served it up to guests no worries at all.  next time i will cook at 160 - 17- for a bit longer.   it only lasted 2 days in our house!

Hi all,

i am wondering if anyone can give me tips on how to make the harvest nut roast in the vegetarian book?  I made it tonight and it tastes great but is not cooked properly and does not look like the picture.  It is something i would like to get right as it is super healthy and tastes so yummy i think my family will eat it.    I have perfected other things once i got tips so hoping to get this one right too.   I think my errors may be to do with the bread and how much i ground up the nuts.  i found the instructions did not mix it up enough so i had to mix it more than what the book said.  have i overdone it and made it too sloppy?  thoughts?  comments?

thanks johnro

was wondering what that one was like as i am a choc girl rather than a lemon myself.  will do tonight - my custard was perfect the other night but a bit too lemony - i must have used a massive lemon for the zest!   so far i have made amendments to the porridge, the risotto and the minestrone pasta soup and with the small adjustments i made all the dishes have come out perfect.  yay!

Soups / Re: Minestrone Soup with Pasta - replacement for EDC book
« on: July 02, 2010, 12:05:46 pm »
I made this today and also think that 130 g of pasta is way too much.   I  am going to do it with 500 g of veggies, more water and only 80g of pasta so that it is more veg than pasta.  has a lovely flavour though so this will def be one of my regular dishes.   will let you know how i go.  I also found the lentil tomato pasta bake ( in the veggie book) way too heavy in pasta and have adjusted.

Lol re the dog comment!  haven't got one but have 2 always hungry and very spoilt cats!

The pumpkin quiche is from the tmx veggie book - it is very gourmet and very very easy - this was my first dish in the TMX and my husband thought i bought it from the Deli!!

I am working my way through the EDC and the veggie book so that i can make adjustments and add notes.  have never been so into cooking - seems strange to suddenly take it up after never thinking myself capable in the kitchen at all!

am off to do some custard...yum  :P

Questions? Technical Issues? The Survival Guide / Re: risotto help

wow!  thanks girls - awesome replies!  have jotted all these tips down in my book.  i do use arborio rice but will make sure i find an italian brand.  from what i can gather  - the sitting in thermomix is the key thing  i missed the first time.   i saw it looked soupy and assumed it wasn't cooked enough so cooked it  longer and then made it too mushy.     can'[t wait to try again now!  xo

Recipe Requests / easy vegie lasagna recipes needed
« on: July 01, 2010, 12:14:25 pm »
Hi all,

I am after some vegetarian lasagne recipes as i am still too scared to try converting my own recipes ( and i never could be bothered doing lasagna prior to having a thermomix)!!

I would love a recipe that contains eggplant - or a spinach and mushroom recipe would be great too.  thanks!   :)   :) :)

hi there,

thanks so much for the replies,

great advice on letting it sit in thermomixer and for pouring over the spinach leaves - i will def try this next time.  i did cook on  :-: and with butterfly in.   still wondering if i need to use boiling or hot water like you would cook  normal risotto?  on the plus side i made risotto cakes tonight  with the copious left overs i had ( pan fried them) and the family loved em!  I'm looking fwd to my second attempt now...

Introduce Yourself / a thermomix new recruit!
« on: July 01, 2010, 11:36:30 am »
hi all,

i am very excited   ;D  to join the world of thermomixers!  I am a mum of a 2.5 yr old little girl, work part time and live in the Dandenong ranges in Melbourne.  we are a vegetarian  household so i loved the idea of cooking fresh and minimising all the effort that gos into chopping and grating tonnes of veggies!

i was previously a person who hated cooking and never imagined myself spending money on a 'food gadget' let alone joining a food forum!  but the thermomix has transformed me into a person who really enjoys cooking and this has amazed all who know me!

i can see how wonderful the thermomix is even though i have only had mine a week.  i have had my share of disasters ( both my porridge and rissotto were crap) but i have had lots of successes too ( my pumpkin quiche was awesome)!

I look fwd to learning lots from all you experienced thermomixers and in particular would love any vegetarian recipe suggestions with kids in mind ( mine is fussy).

Thanking you all already for what i have already picked up from this wonderful forum.

Cheers,

Astrid
