Oh baby!!!I was only trawling iphone apps tonight and thinking how good it would be to have a TM based app, never actually imagining that there's a possibility for such a thing!!please, please , please!!!

Hi, found Tenina's Naan recipe. going to try it myself. I used a heavy baking tray (base of grill tray actually) instead of pizza stone, worked a treat. Hope you actually wanted this!!
1 cup milk 1 egg lightly beaten 2 tablespoons olive oil (can use ghee to be authentic) 3/4 cup Greek style plain yoghurt 4 cups plain flour 2 teaspoons instant yeast granules 1/2 teaspoon baking powder 1 teaspoon sugar 1/2 teaspoon salt
DO:
In TM bowl combine milk, egg, oil and yoghurt and yeast and blend on speed 7 for a few seconds. Warm for 3 minutes on 50oC at speed 2. Put flour, salt, sugar, baking powder into the Thermomix bowl. Using kneading function, knead for 3 minutes. Add more warm milk if the dough does not come together. Place into a large oiled bowl, cover tightly with plastic wrap and leave to rise for up to 2 hours. Preheat Pizza stone on Cross Fire BBQ with hood down until temp shows at least 200 degrees celcius. Turn dough onto floured surface and knead by hand until smooth. Divide dough equally…about 100 grams per portion. Roll out to 1/2 cm thickness. Stretch by hand into a tear shape. Place onto hot Pizza stone for approx 5-8 minutes. You should not have to turn them over. Serve immediately with toppings of choice.
I had of necessity to pre-make these for my BBQ cooking class, and I froze the dough unrisen in portion sizes. They defrosted and rose perfectly and were delicious, even 3 days later!

Hi everyone, I've just come here from the Introduce Yourself pages. Could someone give me a fail-safe way of using Evaporated Milk in the curry recipes (substitute for coconut milk) without it separating please? Jan suggested lower temp and MC off, but added it didn't work every time. Any suggestions would be appreciated, and thank you in advance you lovely group of people

My first reply! Thank you My very generous consultant Elizabeth has lent me her Indian book and I used that recipe. I did a search on this forum just now for Naan with no recipe, but a reference to Tenina's recipe? How to find it, and is it ok for me to put TM book recipes on this forum? I nearly called her "Wanda", as in Magic Wand, but I've already called my GPS that, haha. I saw someone suggest we print recipes from the forum out to get ready for our delivery..I just put my laptop in the kitchen and read straight from the monitor(out of the splash zone of course). Hi everyone, What a great place this forum is. I was out for dinner with friends a few months ago, and I became aware of this "Thermomix" word cropping up in the conversation. The explanation given was unsatisfactory, so I Googled it when I got home. Wasn't long before I was trawling through this forum and booking my own demonstration. I'm not a confident cook, and don't have the patience needed to slice, dice, stir, watch, measure etc, so the idea of throwing a bunch of ingredients into a pot and pushing a few buttons then turning out a beautiful meal has given my life a real lift! When "she" was delivered (I haven't thought of an appropriate name yet, it deserves some careful consideration), I just didn't know what to do first..cook something, read the book, make a shopping list, GAH! I've made lots of naan bread, several different curries(see query at end, but great flavour), perfect rice of course, and the divine Crunchie ice-cream slice. I live alone and have been playing with quantities, but have quickly become a favourite person to work with, as lunches with me are much yummer than what anyone else brings!! I'd like to add that this forum helped me make the decision to buy, as I was confident that help with any issue would be at my fingertips should I need it. I do have a question about substituting evaporated milk for coconut milk, mine always separates..any ideas? I like to use it as a lower-fat alternative. Thank you all for being here.!
