A batch of lemon and macadamia cookies, sweetcorn soup, a kidney friendly alternative to a tomato based pizza topping (not sure about this one as I haven’t made the pizza yet) and a batch of red capsicum, onion, garlic and shiitake mushrooms which is nice in an omelette, on a pizza, on toast or as the base of stews or casseroles. The soup was a kidney friendly recipe but it was horrible so I added a packet of chicken noodle soup to add some flavour and it then became mine not his😁

10 zucchini/carrot patties plus a batch of roasted red capsicum soup for my friend. Thought I’d try cooking the patties in my pie maker for a thicker and neater patty - and it was. I’ll line the bottom with baking paper next time to make it easier to remove them. He will reheat them in the air fryer.

KAtie, in my early 20’s a bought raw chicken had the giblets and feet stuffed inside the body so I used them in my soup stock too. Overnight in the fridge it would set like a wobbly jelly, it was the best stock.

Hi DJ, nice to see some of our early members pop in from time to time. Chookie can’t get into the forum at the moment, I reminded her that she may have to login again but it didn’t work like it did last time. She tried to change her password, they said they’d send the code but they didn’t. I’ve written to Mr IT to see if he can help but haven’t heard back from him yet.

It is nice to catch up with friends Margaret, we’re all so busy these days but one of my friends soon lets me know when it’s time for a catch-up and we book it in.

My appt is well into July Chookie so that doesn’t give me much time to have the follow up optometrist appt and then have the glasses made. In the meantime I’m only using magnified glasses which is not the best.
