Condiments and Sauces / Re: Mayonnaise
« on: January 15, 2013, 02:14:08 pm »
Thank you. I was usung lemon juice! Another thing I realised was that the juice and the mustard were not at room temp in the cooler monthsthat didn't seem to matter, but know it is so hot and humid perhaps it is a factor?  Thanks for the tip!

Condiments and Sauces / Mayonnaise

I have never had trouble making the edc. Ayonnaise in over two years.
However my last two attempts have been very runny.
It has been quite hot and humid recently. Could this be the culprit?
Please help.  Is there another recipe that is not so temperamental?

Soups / Re: chicken and veg soup

Just used your recipe as a base for left-over veg and chicken soup.  Used carrot, celery, red onion and potato.  Threw in a dollop of cream and whooshed!  Delicious!  Thank you!

My 9 year old son made dirt puddings (yummo!) and I am looking forward to making apricot chicken with some apricot sauce (should have been jam) that I made yesterday.

Jams and Chutneys / Zucchini Pickle
« on: January 09, 2011, 09:25:05 am »
I am very new to making pickles (I have never made one before today!), but I have to admit that I am very proud of my first attempt.  I am even sending one down to my Croation grandmother, who provided me with the fresh produce.
This is what I did.

Roughly cut and add to TM bowl;
500g Zucchini
1 red onion
1 capsicum (I used yellow)

Add
1/4 cup salt

Cover with water and leave to soak for 2 hours. (don't know if this is entirely necessary, but all the traditional recipes told me to do it, so I did).

Drain.

Add
4 tomatoes

Pulse until desired consistency is reached.

Add
1 cup raw sugar
1 cup rice vinegar (I used sushi seasoning, as that is all I had)
2 Tbsp garam masala (care of Thermomix)
2 Tsp Turmeric

Cook on Varoma on 2 for 20 minutes.

And that's it.

The consistency of the pickle was a little runny (I think it was because I get a little over zealous with the pulse), but I added a couple tbsp of cornflour and cooked it again for 15 minutes until it thickened.

Very proud of myself!  It tasted delicious.  Hope you like it!  ;D

This may be a silly question, but how do I make cinnamon sugar?
Thank you!

Thank you for your input.  Yes a butter bell does seem to be the way to go!

Made butter today!  It was great!  So easy!!  I put EVOO in at the end which made it very spreadable, although (funnily enough!) it tasted of the oil.  Could you use another type of oil which would not be so strong in flavour, but still make it spreadable?

Where do I buy jam setting sugar?  I'm really keen to give jam a go.  I've never made it.  But 'Hermy' inspires me!  Ta!  :D

Got my 'Hermy' delivered today.  I think it's a boy (which can't be helped!), however he is rather fab!  Made veg stock, rice for sushi, mushroom risotto, berry sorbet and I'm just about to froth milk for my evening coffee!  I believe I will have to leave my husband for my new man!!  :D

Introduce Yourself / Re: My new Thermomix!

I'm hoping to receive 'my new Thermomix' before my birthday, which is this Friday.  I started collecting jars today to put my jam into (any great recipe ideas?).  My mother-in-law had a pacemaker put in on Friday.  Although this was a terrific worry for the family, I have now taken over Christmas.  We are having a 'Thermomix Christmas!'  ;D

Introduce Yourself / My new Thermomix!
« on: December 05, 2010, 12:58:38 pm »
Hi there!
I ordered my new Thermomix last week and I can't wait to get it!  I find myself looking through recipe books thinking 'I can make that in my new Thermomix', and I'm driving my friends and family crazy telling them all the things I will be making in my new Thermomix.  I've struck mayo, butter, tomato sauce, pasta sauce etc from my shopping list because I'm going to make them all in my new Thermomix!  I just can't wait to begin using my new Thermomix!  ;D
