Thankyou for the lovely warm welcome, cookie... I know I'm so very lucky, my poor mum and dad had to get my brothers a 'big' present this year too, to make it fair, which is hilarious seeing as we are all over 30, one got an air con for their house and the other one got a generator for his property down south, I still reckon I got the best Prezzie!!! I'm from the northern suburbs of Perth in wa in a little place called muchea (I think it's safe to make that public as no one knows where the hell it is, lol) and I'm very excited about my first demo tomorrow (kinda :-[) we'll see how it goes!!
Thanks again, and i cant wait to get a spare couple of hours to retest all the recipes I've converted and pop them up on here, everyone on here is so inspiring and supportive, I can't wait to get stuck in!!

Hello everyone, just thought i'd come and introduce myself.
I've been a thermo owner since christmas as my mum and dad bought me one for chrissy, THE GREATEST DAY OF MY LIFE!!, I've wanted one for about 2 years, but have been travelling etc, so no money to buy one - now i don't have to!! I'm so in love with it, that I pretty much feel my life is complete now!! I've decided to become a consultant, just for the hell of it, just the thought of having a job where i get to cook all the time is so cool.
Anyway, thanks to all on this fabulous forum for providing tips and hints, hopefully as i get better acquainted with 'the beast' i may be able to do the same soon!!!

Starters and Snacks / Re: Chicken Stock Concentrate

Hi all, was just wondering how long this stock keeps in the fridge?? Or is it best frozen, I made a quadruple batch today (not in the thermo obviously) as i found the bag of chicken carcasses had 4, not the 2 i was expecting, nice surprise, but couldn't do it in the thermo, so its all boiling away on the stove atm, and seeing as i'm going to have a rather alot of stock concentrate I was trying to think of the best way to preserve it. I'm presuming it doesn't keep the way the veg stock conc does as there is no salt to preserve it. Any tips are much appreciated, cheers!!

PS this is my first post, i should probably go to the 'introduce yourself' page and do just that!!!
