I prefer a Spicy Ginger Cake, similar to how the Jamacians make theirs. For the recipe above, the Crystalised Stem Ginger available in our local supermarket (Tesco) comes in 200g packets.  :) x

The orgingal recipe was copied from BBC Food using milk.

I was looking for an alternative for a softer loaf and heard about using unsweetened Soya Milk as an alternative.

Would love your feedback if you tried with milk.  :) x :)

Hiya

Thank you for your quick responses.  I've been using crystalised ginger that comes in cubes.  Unfortunately they don't melt so I had to give it whiz to smoothen the mixture. 

It is ever so nice.  If only my sister living in NZ could come over - she was known as the ginger cake thief in our family as it tastes exactly how my Mum used to make it  ;D x

Cakes / Thermomix – Boiled Fruit Cake

Thermomix – Boiled Fruit Cake

This recipe is an old Australian Recipe given by my Partner’s Mother-in-Law and has been adapted from using a saucepan to boil the mixture. After mixing, you can either put it in the oven in an 16-18cm cake / or a small 2lb loaf tin, preferably lined & well greased.

Method & Ingredients:-

1.   Preheat the oven on very moderate heat to 160°C / Gas marked 3.

2.   Place 110 g of butter cubed then into the TM Bowl and melt the butter for 2-3 mins / 100°C / Speed 1.

3.   Then add the following:
•   1 TM cup of sugar
•   1 TM cup of water
•   3 TM cups of dried mixed fruit / crystallised ginger
•   1 tsp of  ground nutmeg
•   1 tsp of bicarbonate of soda

4.   Set to lid-lock / 5 mins / 50°C / Reverse Blade / Speed 1

5.   If you are using Crystallised Ginger, whiz mixture on speed 8, until smooth.

6.   Allow to cool where you can prepare the balance of the ingredients:
•   1 egg, beaten
•   TM cup of plain flour (sifted)
•   1TM of self-raising flour (sifted)

7.   Add the rest of the ingredients.

8.   Set the speed dial to lock, set the timer for 2 minutes / Reverse Blade / Speed 3 to fold the mixture together.

9.   NB: If you are making the ginger cake, because the mixture is smooth, whiz on speed ie: speed 8 for 20 secs.

10.   Remove the TM and pour the cake mixture into the greased baking tin.

11.   Place it in the oven and allow the cake to bake for 75 minutes.

cookie - I made this using the MC as the cup. It made quite a small cake. It is quite dark but that would be the carb soda. I think it took about 45-50 minutes in my oven. It's a really nice recipe.

melconyers - I must say it is perfect. I will be using this recipe every time I want to make a fruit cake. Thanks for sharing!

mab19 - although it is a small cake it's very nice.

CarolineW - I made this using the mc as the measure and made a double quantity of the mix which made a normal size fruit cake. I used spelt flour, Gogi berries, apricots, dates, raisins and walnuts. A little slice of heaven!  This is a recipe that will be a fixture.

Ideal for working families  ;)

Tips:   
•   For inexperienced cooks, if your kitchen is quite a cold room especially during the winter months and your loaf tin is cold when taking it out of the cupboard, warm it up by rinsing it in hot water, helps.
•   Also it is hard to make a sandwich loaf using a bread tin as most of 2lb loaf tins  sold in the shops are quite shallow.  To overcome this, I have discovered the “Falcon’s Bake-o-Glide Multigrade Loaf Tin One-Liner” to line the tin.  
Initially, you  might have to trim the Loaf Tin One-Liner to fit the base of the loaf tin but leave enough height on the sides to enable the dough to rise in a shape similar to a supermarket sandwich loaf
•   For those without an Airing Cupboard an alternative solution is to switch on the oven - on very slow heat (apx 50°C / Gas mark under ¼)
•   Ideally if you are using an oven it is preferable with the internal light switched off plus and a towel on the rail outside the oven door to blackout any direct sunlight.

Ingredients
30g/1oz fresh yeast or 1tsp dried yeast
300ml/½ pint soya milk
450g/1lb strong white flour
1 tsp salt (preferably ground sea salt)
25g/1oz butter/margarine

Other utensil: silicone mat for hand kneading, sprinkled with flour

Tip:   If you freeze fresh yeast – defrost the required amount before preparing the recipe.  Before pouring the defrosted yeast into the TM Jug, dissolve & mix it with a little of the milk to get a creamy liquid.

Method:
Put the flour and the salt and butter in the TM Bowl.  Mix the ingredients together, Speed 8 / 15 seconds.
Pour in the yeast liquid and the rest of the soya milk. Mix the ingredients for Speed 3 / 15 seconds.
Set the timer for 1½ minutes, put the Speed Dial to lid locked position and press the Dough button. (Keep an eye on the machine that it doesn’t wobble off the table during the kneading process).
Remove the TM lid and undo the base unit. Turn the TM upside down onto a lightly-floured silicone mat. Allow the dough to drop out with the blade.
Remove the blade.  Knead until the dough is smooth and elastic and place it into the lined loaf tin.  
Prick the dough in the tin with a fork to ensure enough air has gone through.
Place the dough in a warm cupboard or into the oven on low heat for the dough to rise.  
When the dough has risen to the acquired height, raise the oven temperature up to 180°C / Gas marked 4 and bake for 30 minutes.

Recipe Requests / Requesting a recipe for Chicken Ala King

Hiya

I love the Thermomix, best cooking tool I have ever had. 

Has anyone tried to do a 'Chicken Ala King' recipe in the Thermomix yet.  If so, would appreciate if you can please post it as I am dying to try.
