Soups / Cream of Celery & Cheese Soup
« on: August 20, 2012, 11:47:26 am »
My first recipe post - a conversion of one of my mother's soup recipes.  It could probably be tweaked or simplified a bit but is very tasty as is

Name of Recipe: Cream of Celery & Cheese Soup
Number of People: 4
Ingredients:
200g bacon
300g celery (½ large celery), leaves and stalks - chopped into large lengths
1 large potato - peeled and chopped into large pieces
2 onions - peeled and halved
2 cloves garlic - peeled
2 tbsp fresh or 2 tsp dried coriander
1½ tbsp stock paste concentrate (or equivalent powdered stock)
¼ tsp bicarbonate of soda
600g water
120g tasty cheese
200g cream

Preparation:
Fry bacon on the stove - you can keep the rashers whole at this stage - no need to chop.
Place cheese in TM bowl and grate on speed 7 for a couple of seconds.  Set aside and rinse bowl.
Place vegies (celery, potato, onions, garlic) and bacon (broken into large pieces) into TM bowl with stock paste and water.  Chop for 2 - 3 seconds on speed 4, using the spatula to help move the contents about.
Cook at Varoma temp for 3 minutes on speed 1. When the time sounds, add bicarb and cook at 100 degrees for 12 minutes on speed 1.
Blend the soup by slowly turning the speed dial from 1 to speed 10 and keep at speed 10 for 10 seconds.
Add cream and stir at 70 degrees at speed 3 for 1 minute.
Add grated cheese and continue to stir at speed 2 for another 2 minutes (no need to set a temperature).
Serve with a swirl of extra cream in each bowl and parsley or coriander to garnish if desired.

Introduce Yourself / Thermie groupie from Brisbane

Hello thermomix-masters!

I'm a young(ish) mum from Brisbane who works full time and my gorgeous machine has made the most amazing difference to my cooking after a long day at work.  I'm a hippy at heart and very budget conscious so I've long been growing my own herbs and veg and making a lot from scratch - pizza bases, sauces, bread, dips, yoghurt and more.  But the difference in the amount of time and effort involved now is simply astounding.  I'm now in a position to get dinner on the table for the whole family rather than reheating leftovers for our son and cooking a whole other meal for us when he's in bed.  Hubby and I feel better and more energetic for not eating so close to bed time (and not pigging out because we were so hungry waiting til then) and sitting down to a meal as a family is worth the ticket price on the machine in and of itself.

The only thing I'm struggling with is a name.  I'd dearly love to pet name my mean machine but nothing has 'stuck' yet.
