Cakes / Re: Maddy's Cookies & Cream cupcakes

Not usually one for teenage text-speak acronyms - OMG!!!

I'm a BIG fan of the Bimby Chocolate Cake - but I normally make it as uniced cupcakes for lunchboxes - so when I saw your recipe I had to give it a go.  Even my white chocolate loving husband couldn't get enough and they were even better cold (shouldn't have let everyone scarf a hot one out of the oven).

Thank you for sharing this one

When I make these, I cut them and store them in the freezer, that way it takes a little longer for them to crumble in warm little hands.

Introduce Yourself / A very belated introduction

I bought my TM late last November, just as we were packing to move from one side of Australia to the other.  We (incl our new TM) moved in with my in-laws temporarily, before leaving Central QLD just as the airport closed to flooding, then leaving Brisbane the morning the floods hit there.  We arrived in remote northern WA in cyclone season and lived out of suitcases for 4 months before finally being placed in a company house about three weeks ago.  I brought our TM with us on the plane and it was the best decision I ever made!  I have two young kids (5 & 3) and my son has an egg allergy, so I make most things from scratch. I also have limited movement in my right arm (yes I'm right-handed), so my TM is my lifesaver.  I regularly make pizza dough, bread, porridge, fruit pull-apart and our dinner in my TM.  I've had a go at making butter and am trying my hand at yoghurt this evening.

Lastly a very big thank you to the person who posted the Bimby Cake recipe...I used it (using an egg substitute) to make my son a birthday cake while we were in transit - bluish-green icing, some ocean animals from kmart, spearmint leaves cut into seaweed and fruit tingles as rocks.  The cake was delicious and made his day!
