Just one more thing - after the butterfly whisking it looked as it if had curdled, but it hadn't, it was just the 'pattern' created by the whisking.  I had a quick '&$)*^£' moment there though!   :-))

Here's the adapted recipe with all credit and acknowledgement to Mary Berry for the ingredients and to FEC for the method.

Mary Berry’s Victoria sandwich
adapted for Thermione


Preheat oven to 170 (180 for non fan)
Prepare 2 cake tins by greasing and placing circle of parchment in the base of each tin.


4 free range eggs
Put the eggs into the bowl and beat at 5/few seconds


225g caster sugar
225 fat (soft butter, baking spread or the equivalent)
1/2 tsp vanilla essence

Add the sugar, the fat and the vanilla.  Mix 40 secs/speed 7
Add butterfly.  Whisk 3 mins/speed 4
Remove butterfly


225g SR flour
2 tsp baking powder

Mix at speed 3-4 in pulses of about 3 seconds until all is combined.
Scrape down the sides and mix once more.  The mixture should be of a dropping consistency

Divide the mixture between the two tins and bake for 25 mins.  Check after 20 mins.

Remove from the oven and let them cool in the trays for about 5 mins, then turn out onto a cooling rack.
Fill/ice when cold.

I haven't yet used my second one but it's nice to know it's there.  But then I have only had my Thermione for five weeks tomorrow (not that I'm counting , you understand!)

How did I manage without it?

She's been going for a very long time in GB - decades rather than years - but it's only comparatively recently she's really hit the 'big time' with the programme 'The Great British Bake-Off'.  She comes over as a very gracious, very knowledgeable lady and her recipes are a bit like Delia's - sure to work.
I think you'd like her books.

I think it was the link rather than the message as such - it wouldn't let me go there.  I've just updated my anti v protection so maybe it's a little over-sensitive at the moment.  Hopefully that's what it is.   If no-one else has had problems, it's probably OK.

I've just made this, using the FEC recipe as a guide for the order of doing things and Mary's ingredient quantities.  I followed the advice to use the butterfly to whisk the mixture after mixing the egg, sugar and fat and before adding the flour and the results look amazing.  I haven't tasted any yet but if it tastes like it looks it's a winner.  It's risen beautifully.
Fingers crossed for the tasting now!

I haven't tried scrambled egg in my tmx but I have done boiled eggs using the basket and they were perfect!
