Chit Chat / Fast thermy dinners!

Hi everyone!

I have started a new job which requires me to work 9 - 5 somedays and lately I have been slack and just getting take out as I just dont have time to cook when I get home but I am wanting to change that!

I have finally gotten around to doing a menu plan so I am wondering if people could share their fastest thermy dinners. I know options could be risotto but I was hoping there where some healthier options as I am trying to lose the buldge :-P

Thanks so much! I was so proud of myself lol I was such a simple cook pre thermy so I love being able to create things that I would have never dreamed of making before!

I made this today and I was so proud of myself for the result! Ive never made it before or ever eaten it for that matter. Hubby and I both liked it (kids thought it was amazeballs) but we did think it was on the sweet side. Still delicious tho! I followed the recipe absolutely exactly and was so pleased that my meringue worked out.

I made the pastry early in the day then set it aside in the fridge.
I then milled the sugar for the meringue then set it aside as I know that would spoil.
Then I made the lemon curd and set that aside while I preheated my oven and rolled out the pastry. I also cleaned and dried my bowl extremely well and pulled it apart and left it on top of the stove whole the crust was blind baking and I think the heat from the oven helped dry it out that bit further.

This was the end result. The meringue cracked on top as I pulled it out the oven as it hit the rack on top but I was still very happy with it!


Next time I make it I would like to reduce the sugar but I'm in sure of how this will affect the cooking process? Hubby and I don't really eat sugar so I guess we are just not used to it.

I would actually love the recipe of the original! My hubby LOVES chilli and always buys the 15/10 rating chilli sauce (normally made with scorpion chilli)

Would love to be able to create my own :-)

I made this today and took the comments into consideration by using more water (about 280g) and it was completely un usable. I had to make 2 batches as I wanted a few different colours (mixed in the colour after) and by the time I completed the second batch the first batch was literally like solid jelly. I chucked the whole lot and started again using the same instructions just with my own quantities

I used 600g of water, 25g of cornflour and about a teaspoon of vegetable liquid food dye in each jar and this is the result I got.

Made this for dinner last night and it was delicious!

I amended it slightly to make it dairy free by using coconut cream instead of cream and it was delicious! I also chucked in a clove of garlic with the onion as im a garlic freak then served it with steamed potatoes, cabbage, corn, broccoli and red capsicum.

I will be making this for the first time tonight! I will be following chels recipe but I cant have dairy so have whipped up some of Quirky Jos dairy free sour cream and will use coconut oil instead of butter. Fingers crossed it turns out just as good!

I LOVE this recipe!!

If I were to be in my hubbys bad books this would certainly cheer him up, he absolutely loves it!

I make my own crackers to go with it or whip up a batch of bread and its just divine. Its quite a regular in this house.

I tried this recipe today but I have to say I was quite disappointed. It was a very tasty curry however nothing like vindaloo.

The recipe says 1 chilli (which seems a little absurd for a vindaloo  :P) but I ignored that and put in 10 chillies and it still wasnt as hot as I would have liked. I even upped the chilli powder!

Guess me and the hubby still have to have date nights at indian restaurants to get our fix  :)
