Main Dishes / Re: Meatballs
« on: October 14, 2013, 09:00:44 am »
Outstanding recipe. Took me only 10 minutes or less to prepare 18 meatballs. We made the sauce down below, the potatoes for the mashed potatoes in the basket, and the meatballs in the Varoma. 25 minutes and the meal was ready!

Name of Recipe: Caldo Macho
Number of People: 4-6
Ingredients:
1 medium Spanish onion
50 gr extra virgin olive oil
2 medium white potatoes
1 ripe tomato
1 small can of corn (or cut an ear of fresh corn on the cob into segments 3 inches long each)
750 ml chicken broth (can use a bouillon cube)
Sprigs of saffron or safflower
1/2 tsp salt, dash of black pepper
¼ tsp sweet paprika
10 or 15 sprigs of fresh cilantro, loosely chopped
1 large egg, beaten

Preparation:
1.       Cut one medium Spanish onion into quarters and put in the Thermomix 4 seconds, speed 5.
2.       Add 50 gr of extra virgin olive oil. Saute the onion: 7 minutes at 100ºC, speed 1.
3.       Peel and roughly dice 2 medium sized potatoes. Dice a medium red tomato. Add to the Thermomix along with the broth, the saffron or safflower, the paprika, salt and pepper, the corn and most of the cilantro. Cook for 30 minutes, temperature 100ºC, reverse blade, speed 1.
4.       Check that the potatoes are soft and starting to dissolve into the soup. With the soup still boiling and at 100º, speed 2, slowly pour in the beaten egg and mix for 1 minute.
5.       Serve in bowls. Sprinkle each with the remaining fresh cilantro and serve with small bits of a nice sharp cheese to put into the soup.

Tips/Hints:
My partner is from the Canary Islands and makes this a lot. He's adapted this version of the common potaje for the Thermomix and it really comes out nicely. Because it's a soup, you can use the Varoma for steaming anything you want above it as it cooks. Canary Islanders like this soup when the weather is chilly, but for me the cilantro makes it nice and fresh for the summer, too (although his family thinks I’m crazy). Extra bonus: it’s cheap, tasty, natural, healthy and easy to make.  :) ;D

Introduce Yourself / Buenos dias from sunny Spain
« on: December 12, 2012, 02:57:14 pm »
Hi Thermomixers of the world! I found you on Google+ a few weeks ago and thought I'd introduce myself.
I'm Jónico, I lived in the USA till I was 20, then have been in Madrid since 1983. You clever ones can do the math, the rest should just enjoy the mystery of numbers  ;)
I've been cooking lots of dishes ever since college, and never had a food processor or anything. My mate Javier bought me a Thermomix for my 50th birthday (oops, no more mystery!) and we've been using it like mad ever since. I have to admit thata t first I was a little disgruntled at the thought, since I considered myself a good cook without it. People we knew who had one were the "disaster in the kitchen" types, and in fact they rarely used their thermomix except for a few recipes. So I wasn't exactly thrilled, but hey, far be it from me to look gift horses in the mouth.
Our thermomix lady did a fab demo and showed me good tricks to get started. Then we did most of the "learning curve" recipes. Now we're making and adapting recipes on our own, and I'll post ones that turn out well in case anyone would like to try. Javier is from the Canary Islands and does lots of lovely soups and stews from his family's recipes, but now in the thermomix.
I do Spanish and Mediterranean cooking as well as American standby dishes, and I love international foods: Indian, Thai, Nepali, Chinese, just about anything. The thermomix + wok combo might be a pleasant surprise.
If you'd like to know something about Spanish food, let me know.
Un abrazo a tod@s!
Jónico
