adding fruit to basic bread
« on: June 23, 2012, 05:03:13 am »
Hi I want to try  fruit bread.it says inEDC you can add fruitin last few seconds of kneading, doesn't say anything about adding sugar, does anyone know how much sugar I would add and when or is the fruit sweet enough already?

I often find fruit already sweet enough but if you are going to add some sugar (or honey/maple syrup) you can do that already at the start so it dissolves nicely in the dough. Sometimes I add one or two table spoons. If you add too much sugar it will interfere with the yeast.

Try Chookie's fruit loaf. It is really nice. There are 2 of them. One with walnut oil and another you can cook in the bread machine. This can be done in the oven too.
May all dairy items in your fridge be of questionable vintage.
