Help to covert this please
« on: June 25, 2012, 01:00:19 am »
Filling
400g can sweetened condensed milk
2 tablespoons golden syrup
60g butter, melted

Make filling: Combine all ingredients in a saucepan over medium heat. Cook, whisking, for 8 minutes or until golden. Pour over cooked base. Bake for 12 minutes or until firm. Cool completely. Refrigerate for 3 to 4 hours, or until set.

Crown prince has asked for caramel slice & I burn it & get messy oh so messy on the stove.

Would love someone to tell me how to do this stage in the TM

Thanks

My recipe which works states
Place all ingredients in TM and cook 5 minutes 70 degrees speed 3
Cook for a further 5 minutes 40 degrees Speed 3.
Pour onto warm base and bake in oven 15 minutes 180 degrees.

Hope this helps.

Caramel Slice (unsure where I got this one from)

Base
120g butter
120g SR flour
120g brown sugar
80g dessicated coconut

Filling
1 tin sweetened condensed milk
30g butter
2 TBS golden syrup

Topping
150g dark chocolate

Method
Base
Place butter in TMX and melt 1 minute 70 degrees Speed 3.
Add remaining ingredients and mix 10-15 seconds Speed 5.
Spread over the base of a large lamington tray lined with baking paper.
Bake 180 degrees for 15 minutes.

FILLING
Place all ingredients in TM and cook 5 minutes 70 degrees speed 3
Cook for a further 5 minutes 40 degrees Speed 3.
Pour onto warm base and bake in oven 15 minutes 180 degrees.

Topping
Place chocolate into TMX and melt 3 minutes 50 degrees Speed 3.
Pour over slice.
When chocolate is beginning to set, cut into bars.

Not quite sure JD. Delete if you think it is. Someone emailed it to me when I first got my TMX.

As far as I can see DG, the only difference is that the topping has 20g copha, butter or cream added to it. The chocolate is chopped for 7 seconds/speed 8 then the copha is added and cooked for 3 mins/37o/speed 2 until melted.

I'll leave the recipe here, the odd one from books is a good thing - it may encourage people to buy them ;)

I haven't made this for ages as it has a few too many calories in it, but it is lovely.
May all dairy items in your fridge be of questionable vintage.
