Impossible coconut pie

4 eggs
225g sugar
100g unsalted butter, softened
100g slivered almonds
75g desiccated coconut
2 tbs grated lemon rind
2 tbs grated orange rind
125ml  lemon juice
125ml  orange juice
250ml  coconut milk
1/2 cup plain flour, sifted
Lightly whipped cream and fresh passionfruit pulp, to serve

Preheat oven to 180º.
Place sugar, lemon rind and orange rind into TM bowl and mill for 20 sec on speed 9.
Add remaining ingredients and mix on reverse-speed 3 for 20 sec or until combined.
Pour into a greased pie dish and bake for 1 hr or until golden brown.
Serve with whipped cream and passionfruit pulp.

flavourofthemonth - This was nice and I would make it again but definitely without the almonds. That was weird. LOL

Giving this recipe a try tonight. It's a lot different to my Nursing Mother's cookbook recipe. Will come back after tasting and let you all know what we think  ;)
