My method is to mill the sugar first on speed 10.
Add cold butter from fridge, cubed, chop speed 6. Blend speed 4 for a few seconds, insert butterfly and whip, no longer than 30 sec/speed 4 as friction will cause your butter to melt, rather than aerate.

Maybe one of the moderators could put that in the baking thread or whever.

Tenina, that sounds like a good idea so I'm going to definitely try it out.... getting off the PC now it play with my Thermomix lol
