One Pot Curry Chicken and RiceServes 6
Ingredients500g chicken thighs cut into3cm pieces
2 tablespoons curry paste (any is fine)
2 cups basmati rice
1 onion
½ can pineapple thins
1 red capsicim
400ml coconut milk
1 cup boiling water
½ cup frozen peas
PreparationPlace chicken pieces into a bowl with curry paste and stir. Leave for at least 30 minutes.
Set oven to 200
0Chop onion and capsicum in TMX bowl on speed 4/5 to the size you want. (Not too small)
Place uncooked rice into a large dish. Add onion, pineapple, capsicum on top.
Pour over coconut milk and boiling water.
In a single layer put chicken on top and cover tightly with foil.
Bake for 10 minutes.
Uncover and bake for 30-35 minutes or until chicken and rice are cooked.
Sprinkle with the peas, stand covered for 5 or so minutes and serve.
