Gert all the recipes I checked out prior to making this used a mixture of white, wholemeal and rye flours.  Some used "pumpernickel' flour.  When I did a Google search on this I found it it is a blend of white, rye, wholemeal and cornmeal. THere is no industry standard so each manufacturer's blend is different.

Thanks Den I think I will blend the flour before before adding.  I will have to start it tomorrow. As I may be without my Thermothingy after Sat.

No it is fine . My DD's is suffering and has to go to hospital. As she has Crohns I feel I must lend her mine as she relies on hers so much. We think it is the same problem as mine and her Thermothingy is a whole lot younger than mine.

Finally able to put my first loaf here with Tapatalk.

I substituted strong espresso 50 mls  instead of instant coffee and I used cracked rye instead of polenta.
