I'm glad you enjoyed it. I love the idea of the strawberries added to it.

I found this recipe by googling so decided this would be the one to use up a bunch of rhubarb, a couple of apples and some strawberries from the freezer.  Beautiful jam cookie. I used ordinary sugar, cooked it a few minutes extra on Varoma and the consistency is perfect.

Thanks Denise, it's a lovely colour because I used a couple of handfuls of strawberries to make up the quantity of the rhubarb which had mainly green stalks.

It certainly is a lovely jam Judy. My rhubarb supplier can't get any more for me. I won't plant any as I'm the only one that really likes it.
