Verjuice?
« on: November 02, 2012, 06:12:59 am »
I want to make tenina's pesto potato salad ready for tomorrow.

It says to not mix it yet but rather  "toss steamed potatoes with a little verjuice, lemon juice, white wine or champagne vinegar to prevent drying out". Does this mean I choose one of the items in this list to toss it in or all? And what is verjuice - something I can buy? Just out of interest as I'm not planning to buy it.

Here is some information about verjuice:  first introduced to Australia by our beloved Maggie Beer

http://www.maggiebeer.com.au/products/verjuice

I would use either of the other options listed if you dont have verjuice.  Sounds like a yummy salad!  Where is the recipe from?

I checked out Maggie's site & she has a food club. Does anyone belong to it?
Sounds interesting :)

Thanks ladies. I wasn't really interested in buying it but rather finding out what it is so KarenH - thank you for pointing me in the right direction. I ended up using lemon juice as I had it on hand and thought it would be the safest option.

Yes ,  I belong to her food club.  They send reminders when a new news letter comes out.  You can also view her recipes.  I have all her cooking books.  Maggie's recipes always work,  even when converted.
