Pineapple salsa

We get such lovely, sweet pineapples in Queensland I wanted to share this delicious salsa, which goes well with BBQ pork

4 cups fresh pineapple chunks
1/2 cup sugar
1/4 cup white vinegar
1 small green chilli
2 tbsp lime juice
1/2 tsp ground cumin
1/2 tsp salt
grinding of black pepper
4 spring onions, white part only
1/2 cup fresh basil

Put everything except spring onions and basil in TMX.  Roughly chop until chunky.  Cook for 10 minutes on 100 C speed 2-3  :-:.
Add spring onions and basil and pulse briefly
Nice hot or cold and keeps for a week in the fridge

I can taste that salsa - drool.  Have some belly pork in the freezer, might have to thaw it out.
