I'm keen to try the Coconut and Pistachio Delight - mmm - it's in the oven.  The smell certainly reminds me of India.  I just hope it's not too sweet to appeal to my guests.  Will report back tonight after serving!

Sorry Cookie - guests have just departed. It was better than expected - very coconutty but why not?  I found the description/introduction in the recipe book very realistic actually - you could taste all the individual flavours.  It was not too rich - I was a bit worried given that it had milk, cream and condensed milk as well as pistachios ($56 a kilo!!!) and almonds.

I have to admit I loved it, but I'm very partial to anything that reminds me of the sub-continent.

It makes a whole lot, but fortunately DH is still working, so tomorrow the rest goes in for morning tea in the Maths Dept.

Thanks for your interest.
