Choc Orange Shortbread

Choc Orange Shortbread
Makes 12 pieces
Ingredients
185g plain flour
75g brown sugar
125g butter
zest of an orange
50g Lindt Orange Intense chocolate
Preparation
Line a shallow 20cm round tin on base and 1 cm up the sides with baking paper.
Turn oven to 1600C
Chop chocolate 4 seconds, speed 7set aside.
Add all other ingredients to bowl and   :: 1 minute 10 seconds until well blended.
Take ½ the dough and roll out to fit the base of the 20cm tin. Carefully put in. I did it on baking paper and turned it upside down into the tin. It is a soft dough.
Sprinkle the chocolate over the dough.
Roll out the other ½ of the dough and put over the first.
Press a fork decoratively round the edge to seal.
Bake about 30 minutes.
You can sprinkle with sugar after it is cooked if you wish.
Cool 10 minutes and then cut into 12 pieces.

This is my adaption from a recipe in the last Masterchef magazine. It is very nice.

maddy - This is lovely cookie. My butter wasn't at room temp so it took around 5 mins. on ::  for it to come together. I needed to give it an extra 10 mins cooking in the mould. Who doesn't love Lindt chocolate!

really, a pot and water works just fine for me  ;)

The shortbread looks lovely Maddy and I love the mould.

I use the thermomix to cook my boiled eggs.

thanks  :) the moulds make it so easy....I'm hopeless at free form moulding.  Especially pie crusts, they always end up ugly  :P
