Rogan Josh Paste by Jamie Oliver

Ingredients

2 cloves of garlic
1 thumb-sized piece of fresh root ginger
1 quarter cup of roasted peppers, from a jar
1 tablespoon paprika
1 teaspoon smoked paprika
2 teaspoons garam masala
1 teaspoon turmeric
½ teaspoon sea salt
2 tablespoons groundnut oil (sunflower oil works too)
2 tablespoons tomato purée
1 fresh red chili
A small bunch of fresh coriander
2 teaspoons cumin seeds
2 teaspoons coriander seeds
1 teaspoon black peppercorns

Directions:

1. Combine ingredients in TM & blitz
2. Use as a marinade.

The paste will stay fresh for two days in the refrigerator, or pop into freezer.


Have not made it yet, but will be soon as I want to make Lamb Rogan Josh Burgers :)

Hi there,
According to Jamie magazine (Sept/Oct12), first step is toasting the spices on a dry frying pan (could be a TM, you use 100ºC or Varoma, stir mode, till you smell toasted spice), then grind them (blitz in Thermomix), then add the peeled garlic and ginger, peanut oil, tomato paste, fresh chilies and fresh coriander and reblitz. Also, the recipe in the magazine specifies 75 g of roasted peppers from jar (and explains that the last-mentioned three spices are the ones roasted at the very beginning). I hope it's as good as the Jalfrezi from Jamie, and thanks for sharing, Halex!
