Ginger Macadamia Biscuits

A lovely light biscuit with great flavour
Ingredients
:
125g unsalted butter, softened
200g light brown sugar
1 medium egg
3 nuggets of stem ginger* (drained free of syrup), OR 25g Glace ginger - chopped into slivers
50g dessicated coconut
200g plain flour
2 teaspoons ground ginger
1/2 teaspoon ground allspice
1 teaspoon bicarb soda
150g salted macadamia nuts, chopped into flakes
Method
:
1. Preheat oven 170
o
C and line 2 x baking trays.
2. Cream butter and sugar
3 Mins / Speed 3
until light and creamy
3. Add egg
6 Secs / Speed 3
4. Add stem ginger & coconut
5 Secs / Speed 3
5. Add flour, ground ginger, allspice, bicarb
Knead Setting / 25 Secs
6. Add nuts
Knead Setting / 20 Secs
7. Roll tablespoons of dough into balls, press lightly with a fork and bake in oven 15 mins.
Leave on the trays for about 5 minutes before lifting off onto wire rack to cool.
Note: I used Glace Ginger as the stem ginger is hard to find, and you can add more glace ginger according to taste . I handcut the nuts because I didn't want to pulverise them.
You don't have to use the salted macadamias and I didn't have them so I used unsalted and a teensy pinch of sea salt flakes.

I think the ginger taste is stronger the next day. Which is good.
